Temperature-controlled, freestanding wine racks are a perfect storage system, though they are more expensive than a simple wine rack in a cool spot. Small storage systems hold a dozen bottles, larger systems hundreds of bottles. These storage systems are an investment and can be used as furniture. Be prepared to spend close to $2,000 for a storage system.

You can cheaply outfit your wine cellar with wooden shelves -- usually pine -- with 54-, 72-, or 90-bottle capacity. Pine wine cubes provide the most storage for the dollar, and can be stacked to grow with your collection. The biggest benefit of a wire wine rack is that you can easily see each wines label. Metal wine racks tend to be thinner than wooden racks and can fit in narrow spots like hallways or under stairs.

Remember, where you store the wine is more important than how you store your wine. Choose a wine rack that fits your needs and your budget.

Wine Making with Invert Sugar


The more formal name for table sugar is sucrose. We do not often think of sugar making as part of the wine making process but you can speed up fermentation, and reduce the possibility of crystallization, by converting sucrose into its two component parts - glucose and fructose - before adding it to the wine must. Inverting the sugar speeds fermentation because it is the glucose and fructose molecules that the wine yeast will eventually turn into the alcohol and carbon dioxide produced in the fermentation process.

Commercial invert sugar is made with an enzyme called invertase. You can buy commercially produced invert sugar from brewing and winemaking supply houses, but it is considerably more expensive than grocery store table sugar. Partially inverted sugar can be home made from common table sugar without enzymes. The invert sugar recipe below uses lemon juice but you can substitute citric acid, ascorbic acid, or cream of tartar depending on what you have at hand at the time.

Invert sugar is made by mixing two parts table sugar to one part water, and adding two teaspoons lemon juice per pound of sugar. The mixture is brought almost to a boil and then reduced to a vigorous simmer for about 30 minutes. There should be no residual sourness from the lemon juice by that time. Pour the invert sugar syrup into a sealable jar, and refrigerate until cool. You can make a large batch and use it for several wine making sessions.

Invert sugar is used for fermentation only. Do not use invert sugar to sweeten a finished wine as it may restart fermentation. Unless you are making champagne, bottle fermentation seldom has a good outcome.

Not is the case with the wine racks. It is much harder a task than that for you get to know the insulation, humidity and temperature that your wine needs besides the ambience that your wine drinker needs and lot other things.

Because of the specific requirements of the wines in terms of the humidity, etc the wine racks can be only few types in the texture although they may vary in terms of the design, the space they tae and the number of wine bottles they can hold.

For building your own wine rack the first thing that you should be sure of is that whether your walls have sufficient insulation otherwise you will lose nearly all of your good wine. A good insulation ranges from R11 to R19 depending the outer temperature, as basement cellars may need more insulation. After having an optimum insulation the next thing you should consider for building your own rack is the material. The options available are redwood, lattice, country pine and mahogany. Redwood offers a soothing look to the bar while the country pine allows an artistic environment. You can also have metal ones but they require extra care and not much can be offered in terms of designs.

For each bottle there should be a 4 to 6 inch breathing space that will help in not only easy accessibility but also for cleaning purposes. You shouldnt forget to keep the width of the rack at least 2 inch more than the length of the wine bottle although we advise around 15 inch for a single racking. There are many designs and most of them in different geometrical patterns but the best out of them is the rectangular one which is quite safe.

If you are thinking over some color, although it all depends upon the color of the walls and other surroundings, we recommend the dark ones. They give a more romantic and elegant look. Redwood and the mahogany generally do not need to be painted.

There are certain precautions that need to be considered. There should be no electrical installations where you are preparing to have your wine rack. The lighting system at the ceiling is called the can lighting and it should be around 15 inch from the wall for a single deep racking and around 28 to 30 inch for double deep racking. The doors and the windows of the bar should be properly installed so that they maintain insulation of inside from outside. The rack should not interfere with the door, window or any type of switch.

Besides the above ones there are certain racks called as counter top racks meant for a few bottles ranging from 1 to 12 and generally they are suited for a small gathering and are best kept on a table. Similarly there are certain racks which are rightly called hanging racks for they hang to the ceiling or the wall and they serve the purpose of both a show piece and a functional small rack.

The next Shiraz, varietal wines for Australia


Shiraz is the dominant red winegrape variety in Australia. It is the key component of Grange, the flagship Australian wine label. At the other end of the scale it makes up the bulk of the cheap and cheerful red wines in the everyday bottled brands such as Jacobs Creek, Oxford Landing and yellowtail.

But Shiraz has not always held such a hold over the market. Until the mid nineties Cabernet Sauvignon was regarded as the superior variety and this was reflected in the prices paid at the cellar door. But the demand for exports has been mainly for Australian Shiraz and Cabernet has lost ground in the battle for consumer preference in Australia as well.

Shiraz's reign at the top of the tree really started in the middle of the 1950s when it replaced Grenache as the most popular red winegrape variety. In those days a much larger proportion of the wine market was devoted to fortified wine, what we used to call Port.

Looking into the future the role of Shiraz seems unassailable, but there are a few challengers on the horizon. The wine consumer is a fickle creature and fashions can change fairly quickly.

Merlot is the third most popular red winegrape variety in Australia. Much of the production goes into blends with Cabernet Sauvignon, reflecting its major role in Bordeaux. There are quite a few varietal merlots also produced. There are two reasons for thinking that Merlot won't displace Shiraz as our major tipple. Firstly there are viticultural problems relating to poor clones and it performs poorly in cooler regions. Secondly at the consumer end the wine often lacks a distinctive varietal character. There seems to be no consensus among winemakers about what a good merlot should be like. Meanwhile consumers think of Merlot as meaning mellow. It is hard to find any passion, for or against, this variety.

Another contender is Grenache. This variety is widely planted in South Australia, particularly in the Barossa and McLaren Vale regions. In the 1980s it was subject to government sponsored vine pull schemes in the belief that its days were over. Its star is on the rise again both as a varietal and as the key to blends with Shiraz and Morvedre. Notwithstanding this recent return to favour, Grenache will not seriously challenge Shiraz because of its need for a relatively warm climate.

Sangiovese is a variety with a large and growing fan club. There are now over a hundred winemakers using this variety. One factor which has held the variety back in the past has been clonal variation, this has been overcome by careful selection by vine nurseries. Over the past few years a significant number of producers have been able to show just what the variety is capable of. The wines show plum and cherry flavours and to my mind these flavours as well as the Italian wine textures will mean that the bandwagon for this variety will keep rolling for quite a while. The number of winemakers and consumers in Australia with an Italian background continues to provide plenty of champions for the variety.

Spain's answer to Sangiovese is Tempranillo. It is growing in popularity in many Australian wine regions. To a large extent the jury is still as many of the plantings are still quite new. Among the champions of the variety are James Halliday and Mark Walpole of Brown Brothers. Tempranillo matures a little earlier than Shiraz or Sangiovese so it can be grown in slightly cooler regions, Indeed Manton Creek Vineyard in the Mornington Peninsula is one of the more highly regarded producers.

The Durif variety is regarded as a warm climate variety, indeed it seemed as though Rutherglen held a monopoly on the variety. But in fact is relatively early ripening, as demonstrated by John Vale at Balnarring on the Mornington Peninsula. The outstanding feature of Durif is the high level of tannins, but if these can be mastered then

There are a few other varieties attracting attention which will figure in the mix over the next decade or so. Petit verdot is becoming much more popular in the warmer areas. It was pioneered in Australia by Pirramirra in McLaren Vale but it is now grown extensively in the Murray Darling and Riverina.

Barbera and Nebbiolo are the two other Italian varieties which are highly regarded in Australia. Lagrein is a little known Italian variety, in fact it is from the North East of Italy. It is an early ripening variety and as such can be grown in the cooler climates. Cobaw Ridge in the Macedon Ranges region has a wonderful Lagrein.

So what is the verdict? Which red winegrape variety will be the next Shiraz? It seems to be a contest between Sangiovese and Tempranillo, with both camps having some firm adherents. My money at this stage goes with Sangiovese, it has the runs on the board.

Pinot Gris Or Grigio, This Grape Makes Great Wine


One of the most popular imported wine styles in America is Pinot grigio. Nearly all of the Pinot grigio consumed in the US comes from Italy, but as we shall see this is likely to change soon. Pinot grigio is very popular with consumers, but it receives mixed reviews from wine judges and wine critics.

One reason may be that wines made from Pinot grigio do not have a consistent and distinctive varietal character. Consumers are just attracted to the crisp which goes well with a wide variety of foods.

Another problem is that there are two names for the variety in common use. The names Pinot Grigio and Pinot Gris mean Grey Pinot in Italian and French respectively. 'Pinot' refers to the characteristic pine one shaped bunch of this group of varieties.

In Australia, winemakers, marketers and wine writers havent really sorted out which name to call the variety. Some have dodged the issue and refer to Pinot G. This variety closely is related to the much better Pinot Noir variety and is believed to be a mutation of Pinot Noir. In fact in the vineyard Pinot grigio is difficult to distinguish from its putative ancestor until the berries ripen when those of the grigio will have much less pigment. There is another variety, Pinot blanc which has little or no pigment in the berries.

There is considerable clonal variation within the variety. Jancis Robinson says that the variety hardly knows if it is a dark or a light grape. It has several synonyms including Burot and Malvoise in France and Rulander and Tokayer in Germany. In Europe the variety is widely planted. Given the inherent variation and geographic dispersion it is hardly surprising that a wide range of wine styles are produced from it. In Alsace under the name of Tokay d'Alsace, it produces a rich, almost oily wine. In Northern Italy the Pinot Grigio's are light and even spritzig. Under the name of Rulander in Germany it produces wines somewhat similar to white burgundies.

The variety has attracted serious interest in Australia only over the past few years. It is now producing some remarkable wines in regions such as the Mornington Peninsula, Geelong and the Adelaide Hills. Casella wines in the Riverina wine region are very interested in this variety. They believe they can make first class wines even in warmer wine regions, and are devoting some resources to developing a wine suitable for export to the US. Remember Casella is the company who developed the yellowtail range of wines which exploded onto the US market a couple of years ago.

There is a great deal of experimentation with the variety and it may take several more years before the optimal combination of terroir and winemaking technique emerges. In the meantime some great wines are already available for those who are looking for new experience. The style varies from light bodied and fairly straight forward to rich and complex wines that are almost overwhelming in their voluptuousness. This is one occasion when reading some tasting notes about a particular wine before buying is worthwhile.
